I’ve been experimenting for rubs with beef for some time, and hit on this little number. It goes spectacular on pork, but the flavor it gives to tri tip and burgers is just insane.
This is a straight forward rub with a kick. The heat isn’t overwhelming, but it brings out a lot of great flavors from any cut of beef. It crusts well, and even tastes good cold, if you have any leftovers.
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 tablespoon cayenne
- 1 tablespoon instant coffee
- 2 tablespoons curry powder
- 1/4 cup smoked paprika
- 2 tablespoons fresh cracked black pepper
- 1/8 cup garlic powder
- 1/8 cup onion powder
- This makes about 2 cups. Layer in a jar or bowl, and mix.
